Summary: woody - spicy - mellow tannins - dried fruit - cane - bitterness
The nose is sharp and rich, a lovely rhum agricole. Nuts are abundant and plentiful, and the weathered wood has captured the peppery side of pure cane juice rum. Lively and dynamic, the notes of mocha and roasted spices give it a rather dry air. On the other hand, the mellow tannins add smoothness and roundness, developing sweet aromas of candied and dried exotic fruits. Both aspects are equally generous, giving the whole a lush appearance.
The aeration doesn't spoil anything; on the contrary, the nuts are side by side with ripe fruit in a warm, humid tropical undergrowth. The cane pepper is still there, so the profile remains similar except that it's more open and exotic. The acidity of the red fruit, combined with the toasted wood, keeps things light. The rum doesn't overindulge in depth, lightening up to invoke the characteristics of its original white rum.
On the palate, it's this peppery rhum agricole that speaks first. It's honeyed and clothed in wood, pepper and other spices. The cane tightens with bitter citrus zest (lime, combava). The taste buds are gripped, relaxed and opened to a savory woodiness whose tannins mingle with softly roasted, cooked fruit.
The citrus zest lingers on the finish, softened by wood wax and a planty, fruity, hearty sensation reminiscent of plantain.
