Bally Rhum Paille is an AOC Martinique agricultural rum. The pure cane juice is distilled in a Creole column, before spending 12 to 18 months in oak tuns. These large vats allow the rum to rest and acquire that light straw color. In fact, Jacques Bally was the first Martinican rum-maker to age his rums, and later to release vintages. The appellation paille is quite rare, as it is reserved for the Saint James distillery, which distills this rum.
