This pure cane juice rum from the Bologna distillery was first aged in French oak foudres for 18-24 months, then in ex-cognac casks for a further 6 months. It is thus called "cask matured".
Nico's tasting notes
The nose is light and fruity at first, with fresh, dry citrus fruit adding a touch of bitterness. This dryness harmonizes with a more vegetal register, then with a toasty woodiness that evokes toasted bread.
Aeration opens the door to gourmet pleasure, and the sweet spices rush in joyfully. The burnt wood adds intensity and gradually roasts the spices, then even cooks the fruit, whose juices ooze through the barrel.
On the palate, the cane juice has a patina of pepper and other spices, with a dry woodiness that breaks some nuts on the taste buds. Despite this, the rum remains fairly smooth, thanks to a measured strength and a certain fatness.
The finish is gently spicy, and the wood continues to attach itself to the palate, while melting into vanilla and caramel.

On the nose 👃🏻: it's relatively lively, with fresh cane coming through straight away, with candied lemon and blond caramel. The woodiness is not to be outdone, taking up a little space with sweet spices, apple and grape notes that make it warmer on the nose, as well as a hint of vanilla when shaken a little. It's closer to a mature cider.
On the palate 👅: there's a lovely caramel and above all woodiness with a certain creaminess on the palate, it's very pleasant. Slightly roasted wood and sweet spices. A touch of vanilla too, and fresh cane is never far away. It's a little delicacy.
The finish holds on to wood as well as spices like cinnamon. It's light and pleasant, with just the right length on the palate considering its age 👌
One of Guadeloupe's oldest distilleries shows us its expertise with Bologna Cask Matured, which proves that it's perfectly possible to indulge in a range of moderately-priced amber rums. It's not exuberant, but I found it very well made, a good discovery 😃
