Bologna Old Black Cane 45°: Description and customer reviews

Bologne Old Black Cane is the first single-varietal aged rum from Guadeloupe's Bologne distillery. This cuvée follows in the tradition of white rums distilled from black cane juice.
This rum is aged for 3 to 6 years in French oak barrels that have previously contained cognac, before being blended by the cellar master.

Today, Bologne is the only distillery in Guadeloupe to grow black cane to produce its rum. This variety of cane has a very low yield, but possesses exceptional aromatic potential, which is reflected in the 100% cane noire cuvées.

Nico's tasting notes

There's something farmy about this rum's nose, as if in a barn where the straw is still damp, with hints of malted grain. Sweet spices then call up ripe cane, which in turn introduces lime peel.

With aeration, we leave the farm to find ourselves in the orchard, with peaches, apricots, guavas and oranges. All these fruits are coated with a small film of honey that makes them shine even more brightly.

On the palate, the rum initially appears rather light and fluid. A hint of toasted wood wakes things up, and the fruit begins to make its presence felt. They are jammy and oily, joined by sweet pastry notes of almond, raisin and stone.

The finish returns to the cane and its fine nuances of lime peel and pepper.

    The “Bolognes” often have a slightly different taste. I think of plum, prune. This one, in my opinion, is one of the nicest rums to have at home! It has the yellow fruit, the warmth of the spices and the pepperiness of the black cane. The alcohol is present but does not overpower the tastes. The advice given by the Bolognese communications manager, to taste it with chocolate, is very wise.
