Bows HEOC (High Ester OCcitan) is a white molasses rum. It is the result of a very long fermentation (one month!) using wild yeast and vinasse.
This is a grand aroma rum with powerful, concentrated aromas. To match this power, it is bottled at 57%, like the rums of the British Navy.
Nico's tasting notes
On the nose, we're in the presence of something truly unprecedented. This rum manages to reconcile the aromatic power of a great aroma (overripe fruit, olive) with the freshness and precision of citrus. The balance is right from the start, and we don't dwell on this fermentation, which nevertheless goes very far into the earth, mushroom and even milky notes.
Aeration opens the rum to fruit. The sensation of richness persists, but changes completely. Tropical fruit eaux-de-vie follow, with hints of heather and resinous aromatics.
The palate, in turn, reveals new aromas. Like a highly perfumed candy, the rum unfurls tangy aromas of red and black fruits, mango and banana, with an overflowing aromatic power. The earthiness of rum made from fat-fermented molasses underpins the rest, as if to ensure that the intensity never wanes. Freshness is then expressed through licorice molasses, with herbal accents of anise and caraway.
The finish leaves plenty of room for overripe exotic fruit, with endless length and slight acidity.
