Cachaca Soledade Ipê is a Brazilian spirit, a cousin of our agricultural rum. This eau-de-vie made from pure cane juice is aged in barrels ofipê, a South American species of wood. This very fine-grained wood has the particularity of giving a beautiful coppery color, as well as marked notes of nuts.
Cachaça is the basic ingredient in the famous caiprinha, and this expression can also be enjoyed neat.
Nico's tasting notes
On the nose, fine spices, velvety fruit and candied orange peel lead to a very rounded, almost candy-like profile. It's not the freshness of the cane juice that speaks at first sight, but rather this assumed, delicate sweetness.
With aeration, the tonka bean comes to the fore. More accustomed to finding it in amburana casks, we realize that this is a typical Brazilian aroma. It mingles with just blond cane sugar, then with other mild spices such as nutmeg.
The palate is soft and pastry-like, with tonka bean dominating the proceedings. It's joined by a 5-spice blend that fights a little harder, trying not to overpower the delicacy of the little cane brandy that we might tend to forget.
The finish is gently peppery, and the tonka lingers on the tongue.
