Rhum Soledade Ipê is an innovation in the world of Brazilian spirits. It is a double distillation of pure cane juice and molasses. It is no longer a cachaça, but a rum.
It is aged in ipe barrels, an exotic species unique to South America.
This is a tasting rum that can also be enjoyed old-fashioned or in a multitude of other cocktails.
Nico's tasting notes
The nose opens with a rather light but already quite candied cane, outlined by a discreet woodiness. A vegetal and spicy character emerges, in a fairly dry register that revolves around straw, pepper, toasted wood and nuts.
Aeration frees the rum from its straw-like envelope, revealing a gently perfumed character. Spices take center stage, with an original cocktail of tonka bean, cinnamon and ginger, as in a honeyed gingerbread.
The palate is soft, with delicate cane sugar aromas. Spices naturally take over, in a light cane honey with cinnamon and vanilla. Cane juice is present on the mid-palate, with a slight bitterness of lime zest and fine white pepper.
The finish is tinged with lightly toasted wood, and a few delicate notes of tonka bean appear in the length.
