This Cane Island bottled rum was column distilled in Belize at Travellers.

It has been aged in the distillery's tropical climate, in American white oak barrels, for 9 years.

Nico's tasting notes

The nose is rather concentrated, with toasty oak melting into thick caramel. The rum carries solvent notes that dilute this caramel, breaking it down into organic aromas approaching meat juice, and at the same time scents of roasted nuts. The fruit comes to the fore once the woody caramel reduction has finished diluting.

Aeration sees the return of a cozy caramel, still with a very tropical, ripe edge. It feeds on past fruits, damp wood and spicy meat juices.

The palate is a sort of culmination of the evolution of the nose. The balance between wood, caramel and rum with exotic notes is established. The attack is warm and full-bodied, with wood and caramel taking center stage. Then the spicy bouquet enters a gourmet phase, followed by ripe exotic fruit.

The finish is lighter, with sweet, even tangy fruit.
