Chalong Bay Infuse Cinnamon comes from the Phuket region. It is a pure cane juice rum that is infused with cinnamon during distillation. Cinnamon, like sugar cane, is grown locally by Thai farmers.

Cinnamon is the bark inside the cinnamon tree. Cinnamon is produced in Southeast Asia, notably Sri Lanka, but also in the French West Indies and Brazil. The tree can reach 15 meters in height. It is a spice used in virtually every cuisine in the world, particularly in desserts.

This infused rum can be enjoyed neat as a white tasting rum, or used as a base for inventive cocktails.

In brief: sweet spices - pastry - round - fresh

On the nose, unsurprisingly, cinnamon is the queen of the party. Terribly gourmand, it imposes a pastry-like quality, with a power that encompasses but doesn't overwhelm. We'd be more inclined to slip into a buttery cinnamon cake.
The aeration reminds us of Chalong Bay-style white rum made from pure cane juice, with the silkiness for which it is famous. There's even a hint of lime if you pay attention. But of course, it's the pastry-like quality of sweet spices like cinnamon and cardamom that really shines through.

The palate is very smooth, with clear aromas of cinnamon, cardamom and pepper. It's a fairly heavy rum that supports the whole and doesn't let itself be forgotten.

The finish offers a light cinnamon retro-olfaction, neither greasy nor sickening, with a pretty cane brandy finish.
