Habitation Depaz lies at the foot of Mount Pelée, which claimed 30,000 lives when it erupted in 1902. The volcanic soil surrounding the estate, where the cane used to make Depaz rum is grown, is particularly fertile.
Aged in the Depaz distillery's ageing cellars for around 9 years (7 years in casks, then 2 years in tuns), this rum was bottled by Chantal Comte in 2004.
Although this is a limited edition of 2016, there are very few left on the market today.
Chantal Comte suggests accompanying this rum with a chocolate dessert.
