Cihuatan 12 years Cinabrio 40°: Description and customer reviews

Cihuatan 12 ans Cinabrio is a rum from El Salvador, made from cane syrup and molasses. Its name, "Cinabrio", refers to a mineral from which the Mayans extracted a red pigment to honor their sun god. This blend is aged for a minimum of 12 years in the Licorera Cihuatan cellars. American oak barrels that had previously contained bourbon were chosen for the aging process.

Nico's tasting notes

The nose is a pleasing balance of light, fruity, tangy aromas, with some gently roasted notes. Mild spices bring a certain wisdom, and vanilla and cinnamon settle quietly into a mellower profile.

Aeration exposes the rum's lighter side, with fine lemon syrup and pomegranate juice. From this freshness emerge increasingly concentrated red fruits, gradually tinged with vanilla and other sweet, slightly toasted spices.

The palate is very easy, opening with a little grenadine syrup with citrus accents. Mild spices take over mid-palate, accompanied by a sweet caramel that coats the taste buds. Fruit then returns, this time with a hint of roast.

The finish is round and light, with vanilla circling the palate before fading away.
