This Clairin Le Rocher from the 2018 harvest is produced in Pignon, Haiti by Bethel Romulus.
During fermentation, 30% vinasse from previous distillations is added to the cane syrup.
Pot still distillation is discontinuous.
The rum is bottled without filtration or full proof reduction.
