This Clairin "Le Rocher" from the 2021 harvest is produced in Pignon, a commune in Haiti, by distiller Bethel Romulus.
As with previous editions of this Clairin, 30% of the vinasse from previous distillations is added to the cane syrup during fermentation. After this important step, discontinuous distillation takes place in a pot still.
Bottling is carried out at the natural degree, without reduction.
