Clément's unmissable single-varietal cuvée celebrates its 20th anniversary and returns with a colourful 2020 vintage, but above all, an aged version!
This aged edition is the result of a blend of the best Canne Bleue (aged between 3 and 11 years) aged in American and ex-Bourbon oak barrels.
Produced under the careful supervision of the Cellar Master Robert Peronet.
Nico's tasting note
On the nose, one discovers a full-bodied woody flavour, tender but dense, and therefore rather greedy in short. In the depths of the oak lies a very ripe cane juice with a humid and tropical character. The wood and the cane quickly unite and enrich each other. Thus the cane begins to take on the air of an apricot jam that the tannins of the wood subtly spice up.
The aeration shows us an older, more mature character, with a darker, spicier woodiness. Pepper takes on the colour of toasted oak, or is it the other way round, and other spices follow suit. The elegance of the wood, which is constantly evolving in the glass, is reminiscent of a cigar box.
On the palate, the rum is very fluid and melting, despite a slight woody bite in the very first moments. The apricot jam mixes with red fruit juices, becoming more liquid and taking on a hint of acidity. Once it has evacuated, a beautiful woody note takes its place, with a patina of cane sugar and vanilla.
The finish is greedy, on coconut sorbet with nutmeg, with a zest of lime.
"A very greedy Martinique, thanks to a woody taste that does not take itself too seriously.
