This new version of Clément XO Carafe is also a blend of agricultural rums from the distillery's own cellars, at least six years old, as well as prestigious vintages.
Nico's tasting notes
In brief: fresh - flowery - fruity - minty - sweet - orange - spicy
On the nose, the profile is very fresh and flowery. The dried fruit is fresh too, and the nuts are light. The wood is white and young, the pepper gray and light, as fresh as the rest. The nose is both aromatic and light, very fresh and very pleasant. The fruit gradually thickens, from apple to raisin and dried apricot, raspberry and cherry.
Aeration takes us back to the origins of rhum agricole, with more wood and more assertive cane. Complexity is the order of the day, as spearmint takes on a rounder quality, sliding into lemon balm and licorice. The fruit is very sweet, especially the citrus, which gains in consistency as it moves from squeezed orange to marmalade with orange zest and ginger.
The attack on the palate is extremely smooth and fluid, with melted wood supporting a light cane. The Christmas spices are varied and fresh, then the citrus fruits soar with a little acidity. Orange reigns supreme, and it's quite impressive, almost reminiscent of shrubb and its macerated peel.
The finish is also very orangey, with spicy cinnamon notes and a slightly bitter woodiness.
