Compagnie des Indes Jamaïque 5 ans is a blend of 3 Jamaican pot still rums. Aged for 5 years in American oak barrels that had previously contained bourbon, the rum was bottled in France without coloring, adding sugar or cold filtering.

In brief: exotic - dried banana - almond - cherry pit - concentrate
On the nose, this is a typical Jamaican rum, with a very balanced style. The dried banana is present, but doesn't take over. It's well rounded and ripe, but not completely spent, leaving room for almond and wood. Resin and cherry pit keep the rum sharp, with staying power. Luminous exotic fruits are strongly reminiscent of whisky at times, while almond becomes increasingly oily and is joined by pistachio.
On aeration, the cherry pit comes into sharper focus, bringing further elegance. The banana is ripe and rich, then dried and still quite fatty. The rum is balanced, consistent and buttery, but still elegant, with a hint of rancio. The spices are aromatic but not pungent, the peppercorns and cloves freshly opened. This spicy side then becomes more vegetal and even medicinal, with heather plants.
On the palate, the rum is sweet but concentrated. Candied fruit immediately gives it a chewy, exotic bouquet. Ripe exotic fruit is carried by resin, then by a smokiness that returns to the nose. Concentration allows the rum to express itself and evolve on its own in the mouth. All that's left is to savor the slightly oxidized notes of prune, cherry and stone, thanks to which the rum doesn't crash and stays alive.
The cocoa on the finish has a fruity character that takes us to the mellowness of cereals and malt, again evoking whisky. The rum lingers on the taste buds for a long time, with pineapple, dried banana and a hint of smoke.
