Compagnie des Indes Latino is a blend of mainly "Spanish" rums (60% from Guatemala), but not exclusively, as some of the rum comes from Guyana (English influence).
The Spanish type brings gourmandise, while the English influence adds a touch of freshness.
5 years of aging in new bourbon barrels have given this rum its roundness and rich palette of aromas.
The rum is bottled without cold filtration.
Nico's tasting notes
The nose of this blend is rather light, but there's already a certain greediness emerging, with a little oxidation and yeast. It's light, yes, but still relatively powerful in terms of alcohol. We'll need a little aeration before the caramel and coconut aromas come to the fore.
So, with a little rest, here are notes of butterscotch, coconut and light cocoa. The nose has developed and we now have flambéed fresh fruit (pineapple above all).
The mouthfeel is both round and dry. Let me explain: the texture at the beginning of the mouth seems relatively thick, but afterwards it's rather straight and dry. The fresh pineapple flambé and a few floral notes are again expressed in this strength. The pineapple is well caramelized and accompanied by a melting almond nougat.
On the finish: lots of butterscotch, which melts fairly quickly as the rum sinks into the throat.
