Copalli Cacao Organic is a pure cane juice rum from Belize. It is a "single estate" rum, which means that all operations are carried out on the same site, from cane planting to bottling.
The Copalli farm is 100% carbon-neutral, and grows its cane and cocoa organically. The rum is distilled twice in a still, before being infused with organic cocoa beans.
Nico's tasting notes
The nose opens with a light rum, sprinkled with powdered sugar. The cane and its bark combine naturally with the slight bitterness of cocoa. The rum then becomes creamier, and the cane juice takes on hints of milk chocolate.
With a little air, vegetation dominates, with wood, bark and cocoa pods. It's as if these plants are drenched in rain, and we find ourselves immersed in the tropical rainforest.
The palate offers a soft but balanced texture, with a very light, pure cane juice rum that initially takes hold of the taste buds. It's at this point that it delivers its softly chocolatey flavors, with a truly pleasant impression of naturalness.
The finish is always chocolatey, with a delicate touch of sweet spices.
