Copalli Organic Barrel Rested Rum is a rum from Belize. It comes from the Copall Tree Distillery, located in the heart of the primary rainforest. Organic sugar cane is grown here, with the utmost respect for the environment.
This pure cane juice rum is distilled in Charentais stills. It is aged for 6 to 8 months in old bourbon barrels.
Nico's tasting notes
On the nose, pure, light cane juice tinged with milk chocolate, or even white chocolate. Vegetal and resinous aromas add a very green, almost medicinal touch. Lime and zest add a lively, fragrant freshness.
Aeration allows us to glimpse a sort of ready-made ti'punch, with a peppery cane with a mellow, sweet fiber.
On the palate, the attack is very gentle, then the cane unfolds in a rather savory way. It is underscored by very fresh, vegetal aromas, even tending towards menthol. The aging process is expressed here through a soft, slightly peppery blond tobacco. The ripeness of the cane allows it to develop on delicate yellow fruits.
The finish is soft and light, with a lingering hint of finely spiced cane.
