Copalli Organic White Rum is a pure organic cane juice rum from Belize. The small country is home to this small, eco-responsible distillery in the heart of its primary forest.
A blend of alembic and column rums, it is reduced using rainwater from the rainforest. It then rests for three weeks in vats before being bottled.
Nico's tasting notes
The nose is gently vegetal, with a sweet, almost crunchy film. An agricultural rum feel follows, with citrus and slightly peppery cane. It's a fairly light profile, with fluid, refreshing cane and a little acidity.
With aeration, the cane gains in consistency and fullness. It becomes softer and mellower, but retains its freshness, giving it a fine balance. Citrus fruits continue to evoke freshness and lightness.
The palate is round and vegetal, with a tender cane showing a delicate texture. The power is truly imperceptible, making this rum particularly accessible.
The finish offers lovely pepper flavors, balancing out our mellow cane. The finish remains light and slightly spicy.
