Just like the 50° version, Saint Aubin Cœur de Chauffe Blanc 40° is distilled in the Maison du Rhum still, or “Pot Still”.
Before being reduced to 40° and bottled, the “head” and “tail” were removed from the distillate. Only the heart of the toast remains, the most aromatic part.
Nico's tasting notes
On the nose, the cane is very clear, clean and uncluttered. The juice is lightly cooked, revealing subtle notes of licorice and anise. There's a hint of iodine, something crunchy, like fleur de sel. The nose is not at all aggressive, vegetal, aromatic but very calm.
Aeration reveals an aspect very close to just-pressed cane, with bagasse, pepper and straw, for a drier profile. The fiber is sweet, still a little licoricey, and the roundness and freshness have found a balance.
The palate is fresh, with a lively rum that reminds us of when it was fermented. Iodized notes evoke something marine, with pickled vegetables and even a little green olive brine. The sensation is slightly coppery, then the flavors of dry, peppery cane bring us back to earth.
The finish is peppery, with a hint of lime zest. A pure agricultural profile.
