Depaz Plantations de la Montagne Pelée 55° - bottle 2

This rum is the same as Depaz Blanc Plantations de la Montagne Pelée 55° - version 1, only the shape of the bottle is different.

The sugarcane plants used to make Depaz Blanc Cuvée de la Montagne have been specially selected to produce an agricultural rum of great freshness. This white rum has been crafted to honor the terroir of Mont Pelée and the precious work of the men who have worked in the distillery since the 17th century.

Nico's tasting notes

The nose of this rum gets off to a strong start, with the first vapors of alcohol being airy and floral. Cane, of a rather peppery kind, then makes its presence felt. Then the rum begins its symphony of aromas: fruit brandy, pear for example, followed by notes of fermentation that develop strawberry aromas and a salty edge. The bitterness of citrus zest, a faithful ally of white rum, sets in as the latter balances out. What character! It's a straightforward, mineral rum, with the freshness of herbs and those odd strawberry notes.
Aeration reinforces its herbal and spicy character. The character is as strong as ever, imposing itself and making no attempt to smooth things over. Here, we imagine freshly cut grass expressing its aromas to the full.

The attack on the palate is up to scratch, revealing a rather earthy, earthy rum, with notes of fermentation (artichoke, even cabbage). The pepper is gripping and pungent, and the palate is rather rough, with a saline, metallic edge. The cane is the reward for this somewhat unsettling entry, natural and fresh.

The finish continues on cane and citrus zest, without any display of tenderness.
