Depaz Blanc 55°: Description and customer reviews

This AOC white rum draws its aromas from the fertile volcanic soil around the Depaz distillery.

The sugar-rich canes come from 3 different varieties.

After fermentation for 2 days, the must is distilled in a Creole column. The rum then has a strength of 72°. It is then stirred and slowly reduced.

Nico's tasting notes

The nose opens with just-fermented cane juice, still full of freshness and green, natural aromas. It captures the atmosphere of the Martinique countryside, with its plants, spices, earth and lightly iodized air.

With aeration, the rum doesn't spread out in all directions, nor does it necessarily gain in fullness. It stays on course, straight to the cane au naturel, rustic and generous at the same time. Fermentation notes unfold quietly, giving body and heart to the whole.

On the palate, it's an authentic, rustic rhum de terroir. As straightforward as ever, it develops its aromas casually, without batting an eyelid. Peppery, iodized and vegetal cane come through naturally. Sure, quiet, but not placid, the rum spares no corner of the taste buds. It simply depicts its agricultural universe, warm, dry and sweet.

The finish is light, giving way to the deeper notes of fermented vesuvius. You might think of peppery pickled vegetables.
