Depaz Blanc Cuvée Papao is an AOC Martinique agricultural rum from the 2019 harvest. The B69-566 blue cane (a Martinique institution) was harvested on the unique Papao plot. All the character of the Depaz distillery's volcanic terroir is evident. This pure cane juice rum has undergone a long, discontinuous reduction to produce a harmonious rum with an optimal 48% proof.

Nico's tasting notes

The nose opens with a fragrant cane fiber, like fruity licorice. Lime juice flows through its veins, sweet and fresh. Grey pepper mingles with candied bagasse, always in a very gentle spirit.

Aeration reveals a full-bodied cane that unfurls on gourmand notes of marron glacé and cane sugar, all caught in a ginger-lemon syrup.

The palate is round, with a very tender cane and sweet chestnut flavors. It's oily and greasy to the touch, soon enhanced by a pinch of pepper. A little lemony acidity eventually surfaces, signalling a typically Martinican style.

The finish continues on lime, this time with zest and bitterness.
