Diplomático Selección de Familia is a blend of rums. This refined premium rum will gradually replace the Reserva Exclusiva.
The selected rums are distilled from molasses and 90% from cane honey. They are aged for up to 12 years, partly in ex-bourbon casks, partly in ex-sherry casks.
Furthermore, its 43° instead of the usual 40° gives it more aromatic power.
But what is the Diplomático version of sugarcane honey? After a long interrogation with the distillery's master blender, the answer is quite simple: it's not cooked cane juice, or refined molasses. In fact, it's molasses extracted earlier in the sugar-making process, and therefore closer to cane juice than molasses recovered once the sugar has crystallized. As a result, cane honey is more delicate and aromatic than molasses!
Nico's tasting notes
The nose opens with a rather light, fruity rum. The lightest notes are coated with a fine film of vanilla, leaving a small dusting of toasted oak in their wake. The woodiness is soft and coated, with a fruity (sweet red fruit) and slightly acidic bubble.
Aeration will tend to smooth the profile of this rum, which then suffers from no asperities. The fruit is definitely enclosed in its toasty wood shell, and it's the sweet spices that take center stage.
The palate is round but well-balanced, with a discreet sweetness that gives way to caramel-coated wood. Vanilla also makes its presence felt, and soon weighs heavily on the tongue, which inevitably succumbs to its deliciousness.
The finish is really round, and a vegetal note comes to mind, clearly reminiscent of cola.
