Evan Williams Bottled In Bond is a Kentucky Straight Bourbon produced at the Heaven Hill distillery. It has the distinction of being Bottled in Bond. To qualify, the bourbon must be from a single harvest, distilled in a single distillery, aged for at least 4 years, and bottled at 100 proof, or 50% alcohol.
This bourbon has also benefited from a "sour mash" fermentation, where a portion of residue from old distillations is added to the mash. This method, similar to that of Jamaican dunder or grand arôme in the world of rum, produces complex, full-bodied eaux-de-vie. Bottling is carried out after charcoal filtration.
