Ferroni Brut de Fût Antilles Françaises 4 Ans is an agricultural rum from the north of Martinique, made from pure cane juice. Guillaume Ferroni, distiller and cellar master extraordinaire, has crafted this rum in his own way, in his cellar in Provence.
To this end, he chose an initial 3-year maturation in bourbon barrels, then transferred the rum to local barrels in the south of France, which had previously held Beaumes de Venise muscatel.
Nico's tasting notes
The nose is marked by a dark, candied woodiness, and one can already imagine that the rum has gone deep into the barrel. Caramelized nuts carry a slight powdery edge, along with balsamic notes that open onto a slightly vinous, sweet fruitiness.
Aeration doesn't detract from the rum's concentration, which retains a thick, structured, full-bodied character. The full-bodied wood reveals aromas of walnuts, dark dried fruits and candied, gourmet tannins.
On the palate, the balsamic side is immediately in place, with a woodiness that flirts with soy sauce, well-reduced caramel and chestnut honey. The roast is more present than on the nose, and the coffee makes a few forays into cooked cane juice.
The finish is greedy, full of roasted nuts caramelized with cane syrup.
