Brut de fût
A rum bottled without reduction, i.e. at the natural degree, after an ageing in wood is called a brut de fût rum. By reduction we mean "dilution with water".
A lot of brut de fûts rums are born these last years with age counts which can vary from 1 month to more than 15 years. It should be noted that the appellation brut de fût is not synonymous with high degree. The degree of bottling is the one at the exit of the barrel but it does not indicate the degree at the exit of the still, or if the rum was reduced before the setting in barrel or during its breeding...
The distilleries, with the help of their cellar master, choose themselves the degree of putting in cask. This information is often kept secret by the cellar masters. A low degree of casking allows to obtain different aromas.
