Ferroni Brut de Fût Grand Arôme 2016 is an exceptional molasses rum that comes to us from Martinique. Its ancestral manufacturing process, and in particular its long natural fermentation, make it a rare rum, rich in aromas but also in history.
This cask strength has aged entirely in Provence, in a dry cellar of Maison Ferroni, in Aubagne. French oak barrels that had contained cognac were used for this 5-year maturation.
Nico's tasting notes
On the nose , a good ladle of solvent indicates an extremely concentrated rum, ready to explode and pour out its fruity aromas without any consideration. The pineapples, mangoes, passion fruit and jackfruit are overripe, full of aromas and sugar. Their fermentation has even gone so far as to develop iodized notes of olive brine.
Aeration and rest take us towards an increasingly pastry profile. This one calms the ardor of our exuberant tropical fruits, bringing raisins and other dried fruits, almond milk, a little pine resin, yeast, pits… A pretty rum baba seems to waddle in the glass, swollen and juicy, lacquered with jam.
The palate is powerful and tannic at first, with a slightly acidic compote of apples and exotic fruits that bursts into every corner of the palate. Once established, it becomes increasingly candied, and the fruits increasingly sweet. A slight coppery touch introduces pits and currants, for a definitively pastry side.
The finish is very exotic and fruity, with jackfruit, overripe mango, and endless length on olive, leather and copper.
