Ferroni Brut De Fut Maurice 2013 is a blend created by the genial Guillaume Ferroni. This pillar of the cocktail scene has also devoted himself to distilling and aging rum. This passion has given rise to the famous Bruts de Fûts series, offering unique ageings from a variety of origins.

Mauritius is in the spotlight for this cuvée, with the Labourdonnais, Chamarel and Gray's distilleries (better known for their New Grove rums). While the latter produces the vast majority of molasses rums, the former two distill only pure cane juice. The blend presented here is therefore composed for the most part of pure juice rums.

Guillaume took delivery of unaged white rums, which he matured entirely at home in Aubagne. For an initial period of 4 years, he placed them in cognac barrels (French oak) and new American oak barrels. This was followed by 2 years in an extreme dry cellar (under sheet metal), in barrels containing rye and Jamaican rum.

Nico's tasting notes

The first nose is relatively dry, with notes of cane straw and dry bagasse, and a hint of hot metal. Then comes a highly concentrated quince paste, enamelled with liquorice and white flowers. The flowers and their vegetation take on greater proportions, with images of fatty, exotic plants and humus-filled aromas.

Aeration reveals touches of concentrated prune and quince paste, with a hint of motor oil in the mix. The latter contributes to a slightly "industrial" atmosphere, with hot metals on which the fiery, fruity eaux-de-vie flow.

The palate is both serious and majestic. It impresses with its straightforwardness, but above all with its unique profile. We seem to be looking at an ancient cane, with mature, candied juice, deep fiber and weathered bark. The sugar cane flirts with orgeat, almond, and even has a putty side that gives it a welcome thickness.

On the finish, fruity scarves emerge and eventually join some slightly metallic fruit pastes.
