Ferroni La Dame Jeanne Heavy N°14 is a pure cane juice raw still rum. It was selected by Maison Ferroni in the Canary Islands for its very specific identity, characteristic of the terroir.
This rum underwent a slow fermentation and was distilled in an Ergot copper still. It then rested for several weeks to several months in open jars, where it aired and improved. Bottling was carried out without reduction, i.e. at its natural degree.
Nico's tasting notes
On the nose, the cane juice seems to swell up in the glass and escape in an abundant puff. It has a very natural character, very much like fermenting vesou and the eau-de-vie harvested straight from the still.
Aeration brightens and clears the aromatic profile, which then breaks down into fruity notes (blackberry, raspberry) and fresh herbs such as mint and lemon balm. The "heavy" side is then unmistakable, as deeper notes approach candied lemon and olive.
On the palate, the rum's not inconsiderable power is quickly balanced by its roundness and fatty texture. The cane juice is lively and full of spices, blackberries, blackcurrants and passion fruit, without masking its vegetal, herbaceous side. A certain freshness reigns here, combined with the vigor of a distillate as close to its natural state as possible.
The finish is fragrant with cooked cane juice and aromatics, with a hint of salt-preserved lemon on the long finish.
