This bourbon, distilled at the small Illinois distillery FEW, is made from corn (70%), rye (20%) and malted barley (10%).
The eau-de-vie that leaves the still has a strength of 67.5°. It is put at 57.5° in new American oak barrels from Minnesota, for a little less than 4 years.
The bourbon is bottled at 46.5° from a small quantity of barrels (small batch).
Florian's tasting notes
The color is amber, with many fine, rapid tears lining the walls.
A dense, flowery nose. Jasmine, honeysuckle and violets, what fragrances! Logical evolution to fudge, nutmeg and black pepper. More deeply, and because a slight oxygenation allows it, notes of toasted bread and butter emerge. A touch of blond tobacco and leather.
On the palate, it's soft and round at first, then quickly floral and spicy. The nose translates perfectly on the palate, again with flowers, violets and lavender (which underpin the entire structure), caramel and, before long, notes of burnt barrel, toasted bread, tobacco and leather.
The finish is of good length, with lavender and tobacco. Sweet floral bitterness.
