Bayou select is a rum distilled from a blend of unrefined cane sugar and molasses. It was aged for 4 years in ex-bourbon barrels from the Buffalo Trace distillery. It was then matured in ex-Bordeaux wine casks using the Solera method.
Bayou Distillery is located in Louisiana, in the heart of the bayou, the warm, humid area between the Mississippi and the Gulf of Mexico.
Nico's tasting notes
The nose is round and delicious, with a fruity, funky feel. Ripe exotic fruits are concentrated in a thick juice. Above all, there's a very ripe banana, with a hint of dried banana, and a blond tobacco that resembles well-melted white wood.
The aeration enhances the gourmet taste. The large, ripe banana is now covered with a drizzle of melted milk chocolate, then a topping of praline caramel. The rum is brioche-like, a black tea smokes calmly nearby, and the cigar box has just been opened.
The palate is well-balanced and even more delicious than the nose. After a slightly sweet and tart attack, we find our pretty banana, which realizes its full potential with a lovely, chewy texture. There are also surprising notes of fresh, well-rounded cane, followed by delicate flavors of nougat and butterscotch.
On the finish, blond tobacco, black tea and vanilla complete the picture, with a very rounded, candied vegetal side.
