Gold Of Mauritius Dark Rum Solera 8 is a blend of molasses rums from Mauritius. As its name suggests, it has been aged in Solera, a system inherited from the bodegas of Jerez, Andalusia.
This maturation principle involves stacking the barrels, with the oldest at the base of the pyramid, and the youngest at the top. When the rum is racked from the lower barrels, the void is filled with the upper ones. In this way, the older rums "educate" the younger ones. It's a dynamic blending process that takes place throughout the ageing process, not just at the end.
Nico's tasting notes
The relatively light nose of this rum takes us down the aisles of a confectionery shop, where fruit is covered in a crunchy film of caramelized sugar. The orange peel stands out a little more than the others, adding a welcome bitterness.
Aeration reveals the barrel and its wood, which also brings us more structure and depth. The sweet spices follow naturally, blending easily with our fruity confectionery factory.
The palate is soft and very tasty, thanks to an essence of American oak that pours forth its aromas of vanilla and coconut cream. A small ribbon of grenadine syrup slips between two woody layers, adding a fruity nuance. Sweet spices and mellow wood dominate this very mellow, gourmet profile.
The finish brings a hint of roast and coffee, which changes to caramel in the long finish.
"Lots of mellowness and gourmandise for this rum, which offers us a chewy woodiness..."
