La belle et la bête by HSE is a cuvée of very old rum with a surprising "double finish".
After more than 5 years of ageing, the rum was finished for 6 months in two separate casks. For this finishing, the cellar master chose the following two casks:
- a 550-litre Kilchoman Loch Gorm barrel,
- and a 200-litre barrel of Kilchoman Sanaig.
These two peated single malt whiskies have themselves been matured in sherry casks.
Once finished, the rums were blended and bottled without reduction.
