HSE Brut de cask 2015 Forêt de Montpensier is a rum produced by the famous Habitation Saint Étienne distillery.
After distillation in 2015, the rum remained in barrels whose wood comes from the Montpensier forest.
The soil that makes up this Auvergne forest is of the clay-loam type.
The objective of this version and the one aged in barrels from the Chantilly forest , beyond the pleasure of tasting successful vintages, is to be able to compare the influence of the type of barrel on the rum.
Nico's tasting notes
On the nose , a humid nuance of undergrowth takes us into a comfort that is both warm and tropical, whose vegetal side envelops us. The oak takes on more importance with a little time, it appears elegantly spicy.
Aeration brings us some tangy nuances, with passion fruit, limes, and why not a little water fruit like star fruit. The rum, however, remains very concentrated and deep, with this quiet and melted woodiness like a very fatty tobacco.
The palate offers a very soft touch, which is balanced with a rather dry aroma. The oak tannins are toasted and stretch into almost mineral notes of charcoal, before gradually gaining the deliciousness of toast and coffee.
The finish is a candied cane juice, finely encrusted with dried fruit.
“Several nuances of oak are detailed in this subtle agricultural rum…”
