HSE Brut de barrel 2015 Forêt de Chantilly is a cuvée distilled in 2015, then aged in oak barrels from the Chantilly forest.
These barrels have been previously heated in a specific way to maximize the potential of the wood on the aromas of the rum. Indeed, the Chantilly forest offers sandy and limestone soil.
Compare with the vintage made in barrels from the Montpensier forest , using a sample for example.
Nico's tasting notes
The nose is extremely generous and aromatic, without any burn, but with a great woody breath which takes us directly to the middle of a cellar, in a row of barrels which exude agricultural rum.
With a little air, we see that the candied cane has blended with the melted tannins to create a velvety compote that seems to stretch to infinity. The woodiness is very present but really superb.
The mouth offers as much presence as the nose, from the first moment. The tannins first grab the taste buds with their resinous and green side, with a grain that allows them to cling to the palate. They then blend into fruity notes, sometimes fresh, sometimes very ripe, before revealing an irresistible delicacy of sweet spices.
The finish is a little more roasted, with caramelized nuts.
