Isautier 2005 l'Apollonie pays tribute to the name of one of the first boats owned by the Isautier brothers, Louis and Charles. It was they who founded the distillery. The name of this boat is also the name of Louis Isautier's wife.
This cuvée is made from a traditional molasses rum that was distilled in a column still in 2005.
It was then aged for 16 years in a single ex-cognac French oak barrel. As with all Isautier rums, ageing is tropical and takes place in the cellars of Saint-Pierre, Reunion Island.
Only 557 bottles were produced, making this a rare cuvée.

For me, it meets all my criteria. It is a rum with pronounced spices, molasses present and long in the mouth. Perfumed as desired....an intoxicating side that I like. Too bad there’s only one bottle left 😊🥲
