Kill Devil Trinidad 21 ans is a molasses rum produced by the Fernandes distillery on the Caribbean island of Trinidad. Kill Devil is a brand of Glasgow-based independent bottler Hunter Laing, also known as a Scotch whisky specialist.

This vintage rum was distilled in March 1999. After 21 years of ageing, this unique cask was bottled at its natural strength, without cold filtration or coloring, in 249 bottles worldwide. Each bottle is numbered.

The name "Kill Devil" derives from the nickname islanders gave to locally-produced distillates in the 17th and 18th centuries. They were believed to have the power to cast out demons.

Nico's tasting notes

On the nose, you discover the rum as if you were entering a room with an open fireplace. A little soot has settled on the walls, and the olfactory ambience is both charged and warm. A hint of tar or engine grease mingles with a touch of peat, for a profile that then tends to evolve towards more fruit.

Aeration blows out as much of the smoke as possible, to reveal a few dark cherries, prunes and spice-encrusted nougatine. The molasses, concentrated by time, is transformed into toffee or brownie with pecans and soy sauce.

On the palate, we discover a concentrate of cereals, wood and vegetal flavors, as in a highly fermented soy sauce, or even, to take it to the extreme, a Chinese baiju. The tarry side of Trinidad rums is expressed here in an almost sulfurous way, in a hot, humid climate. This humidity gives rise to nuances of mushroom, undergrowth and wet cardboard, with a hint of saltiness.

The finish gives way to a slightly salty molasses, adorned with coppery nuances.
