L'authentique is a white rum which, as its name suggests, is made in the pure tradition of the small family distillery La Favorite: using a steam engine dating from the early 20th century to crush the cane, a long natural fermentation and distillation in a small Creole column.
Nico's tasting notes
The nose opens with a lovely sugarcane aroma, soft and mellow, with velvety flowers and ripe citrus fruit. Very quickly, La Favorite's famous pepperiness enters the scene in a beautiful way, without offending anyone. It creates an agricultural atmosphere of restraint and control. It's the cohabitation of chic and rustic that enhances a heart of radiant, fruity rum.
After aeration, the rum is open and fruity, full-bodied and generous. In an exotic, tropical scene, colorful fruit spreads and rolls under the nose, between sweet, ripe cane stalks. The view rises to Mont Pelée and the rum regains its peppery minerality, with a drier, typically Martiniquais character on cane bark and bagasse.
The palate is straight and peppery, well-balanced, slowly gaining in fullness until it coats the palate. As you enjoy the peppery film that covers your taste buds, the rum begins to fall back in heavy droplets of red fruit syrup, which burst forth and impose entirely different aromas: fermented cane juice and slightly bitter lime zest.
The finish continues on these notes of fermentation, almost to the point of olive, for a truly authentic touch.
