This 11-year-old great aroma rum was distilled after a long fermentation, in Reunion, at Savanna.
Aging in oak barrels took place entirely on site. It is therefore 100% tropical aging!
The French bottler Saint Éloi selected and assembled 5 barrels. The rum was not reduced before bottling.
This edition is limited to 499 decanters.
Note that there is also a reduced 43° version of the same assembly .
Nico's tasting notes
On the nose , a striking concentration emerges, and we imagine that it will take some time for all these solvent-doped fruits to begin to relax. The opening comes, quite surprisingly, from an iodine, brine solution, which begins to melt all of this.
Aeration brings its share of surprises, with sherry-like oxidation notes, full of raisins, prunes and nuts. This perfect marriage evolves and varies, there is enough to spend a very long time in the company of this rum.
The palate is unsurprisingly as concentrated as the nose, and begins the journey with a dense handful of thick-skinned black berries. The grapes and prunes seeming to come straight from a bodega in Andalusia take over with a disconcerting naturalness. The mid-palate is divided between red fruit sorbet, cherry yogurt, raisin and rum pastry cream, all in a complex and delicious intertwining.
The finish brings a touch of coffee, licorice, as well as a slight tannic dryness that makes you want to return to it endlessly.
“A superb expression of great aroma, of which a tasting is not enough to grasp all the complexity…”
