Matusalem Insolito Wine Cask is the fruit of a highly original process.
First of all, 15-year-old solera is filtered over charcoal to restore total transparency, just as it left the still, with the aromas of aging preserved of course... Then the rum is aged for a further 3 years in barrels of Spanish red wine, Tempranillo (an early-ripening red grape variety). This final stage gives it fruity notes, a lovely pinkish color, and extreme roundness!
Nico's tasting notes
The nose is relatively light, in a Cuban style familiar to the brand. A light roast of nuts, coffee, oak, and silky-smooth brandy. Sweet caramel settles quietly but surely on the surface.
As time goes by, the rum gets sweeter and sweeter, going as far as nougat and vanilla cream.
The palate is initially very caramelized, followed by nougat, nougatine and parlines. As you'll have gathered, the mood is one of softly caramelized almonds, well-coated roasting and gourmandise.
The finish is a little drier and full-bodied, with the toastiness of the barrel showing through.
