Mezan Dominican Republic 2012 is a molasses rum produced by one of the most modern distilleries in the Caribbean: Acoholes Finos Dominicanos . Founded in 2009 in San Pedro de Macoris by a Spanish group, this distillery is energy self-sufficient thanks to the biomass provided by bagasse.

This rum was made from sugarcane molasses grown in the provinces of San Pedro de Macoris, La Romana, La Altagracia and El Seibo. The juice underwent fermentation with proprietary yeasts and distillation in 2012 in a 5-column pot still .

Its 10-year aging process took place in ex-bourbon American oak barrels (3 years in a tropical climate and 7 years in Europe in a continental climate).

5500 numbered bottles were released, bottled without cold filtration, coloring or added sugar.

Jérémie's tasting notes

On the nose : There are notes of vanilla, coconut, cane honey and a certain chlorophyll freshness; with time a resinous side emerges.

On the palate : The texture is fluid, the initial taste is slightly acidic, releasing aromas of herbs and cooked brown sugar. Over time, it evolves into a bittersweet dark chocolate, accompanied by some relatively subtle spices that nonetheless tickle the tongue. With time, the spices become more pronounced (cinnamon and pepper).
