Montebello 3 ans aged rum is made from pure cane juice. It is aged entirely in the cellars of the Carrère distillery, owned by Montebello rums, in ex-bourbon American oak barrels.
Nico's tasting notes
The highly aromatic nose of this rum is divided between very sweet vanilla and a greedy, pastry-like fruitiness. Candied fruits are coated with blond caramel, and there are cherries, love apples and a vegetal note that introduces itself over time (menthol).
Time and air coat everything a little more. The cane is candied to the extreme, so that its pepper seems very sweet and its juice begins to take on cooked, licorice notes. A fruity, gourmet aspect remains, but it would be better to take the opposite direction and make it more acidic.
The palate is much more "agricultural" than the nose suggested. Green, candied cane clings to the palate with notes that are as vegetal as they are pastry-like, then mingles with cooked, caramelized fruits such as apple and banana. A bouquet of spices (star anise, nutmeg, pepper) perfumes the whole, and the lime zest is as candied as the cane stick.
The finish is long and delicious, with candied fruit and licorice.
