Séverin VO is a very old agricultural rum distilled from sugarcane grown on the fertile soils of Sainte-Rose.
The climate of Basse-Terre has given the cuvée a rich aroma that is rounded out by a delicate woody character after a minimum of 3 years in oak barrels.

In 2011, Séverin VO won a bronze medal at the Salon de l'Agriculture in Paris.

Nico's tasting notes

Initially, the nose of this Severin is rather rustic: the smokiness and burnt plastic will fade after a short opening. This is followed by a wave of fresh, white, raw wood and a hint of roasted hazelnut. The acidity persists in line with the smokiness of the first moments, with something mineral and charred. The toasty oak gives off aromas of quince and stewed apple.
With aeration, the rum gains its natural agricultural rum tone, based on cane of course, but also pepper and lime zest. It's still mineral and iodized, with the generosity of fruit in ambush. It's a big fermentation of ripe exotic fruit, abandoned there, that can be read between the lines.

A white peach from nowhere lands on the tongue, immediately restrained by the rum's overall dry, rustic character. The cane then expresses itself at the heart of a smoky, slightly vanilla woodiness, which forms the core of a relatively linear palate from then on.

The tasting ends without lingering, in the same way, with pepper and vanilla flavored cane.

    First surprise: the nose is not dominated by sugarcane. There are notes of anise, spices, wood and a hint of smoke. Gradually, sugarcane takes over the glass. Pepper and notes of baked apple are also present.

    Very fruity and greedy on the palate. Quite round. Peach, melon, lemon, exotic fruits (mango, pineapple). Then come the spices (cinnamon, nutmeg, vanilla), especially on the finish.

    A long, warm finish on vanilla, spices and melon. In addition, there's a hint of smoke.

    A great rum at a great price.

    I'm seduced by this rum, which is powerful, fruity, gourmand and spicy. It is well made.
