Jérémie's tasting notes
On the nose: an elegant and harmonious nose, where aromas of honey, white grape, and peach blend with a clean and delicate oakiness. Fresh sugarcane gradually emerges in the background. With aeration, citrus notes become more prominent, dominated by candied lemon enhanced by a subtle touch of camphor.
On the palate: the attack is direct and expressive. Perfectly ripe sugarcane immediately asserts itself, revealing a peppery character before evolving into a rounder register, marked by syrupy, vanilla notes and a particularly silky texture. This sweetness balances the spices, while the tannins from the wood provide a light structure without ever drying out the whole. With aeration, the oak integrates further and reveals beautiful roasted notes evolving into intense cocoa. The candied lemon notes, already perceived on the nose, reappear elegantly on the finish.
The finish: long and balanced, it prolongs the flavors of ripe sugarcane, supported by refined woodiness and a persistent spicy undertone.
