Opthimus 15 ans finition Single Malt Whisky is a molasses rum from the Dominican Republic. The Oliver family, of Cuban origin, left the island during the revolution. However, they have retained their know-how and produce a multitude of rums and other spirits, always in the Cuban tradition. They produce light rums, for which ageing is of prime importance.
This 15-year-old Opthimus has the particularity of having been finished for several months in old Scottish Single Malt casks, after 15 years spent in solera.
Nico's tasting notes
On the nose, the sweet, vanilla-flavored rum opens with a surprisingly fresh, minty, vegetal touch. A toasty cask hides behind it all, bringing toasty, roasted, almost smoky notes. A caramelized sweetness also pervades this rum, along with a hint of pastry.
With a little air, a balance is achieved, with roundness, but also with an interesting vegetal and pastry character. A sort of candied vegetal, along with a nutty frangipane, form a gourmet amalgam underscored by molasses.
The palate is smooth and flavorful, with a rum that has more than one string to its bow. The molasses, with its characteristic licorice aroma, is smooth and delicious. It glides effortlessly over soft white oak, with a lightly toasted surface. The pastry notes add even more deliciousness and make you salivate, as would a frangipane with cherry liqueur and vanilla, for example.
The finish is slightly herbal, almost medicinal, with a touch of heather reminiscent of whisky.
