Produced by Dominican Republic company Oliver y Oliver, Opthimus 15 ans finition Porto is column-distilled from sugar-rich molasses, then aged in bourbon casks for 15 years using the solera method. The rum is then decanted into barrels that have previously contained Port for a few more months of aging.
Nico's tasting notes
In brief: sweet - vanilla - caramel - soft woody - smoky - black fruit
The nose is soft and sweet, with notes of molasses, vanilla and roasted nuts. A few spices dot the surface of a rather soft, slightly smoky woodiness. The whole gradually melts and blends, concentrating on delicate notes of coconut and almond.
Aeration reveals more toasty notes. It remains soft, however, with caramel, chocolate, sweet spices and the roundness of vanilla. There's a hint of prune and a few peaks of blackcurrant or blueberry, followed by a well-balanced vanilla woodiness with well-dosed aromatic power.
The attack on the palate is sweet but also spicy, like a vanilla cane. More intense notes of coffee, nuts and cocoa concentrate in a sticky but not burnt caramel.
The finish leaves a light alcohol flavor and a veil of smoke, then expresses a sweet fruitiness in the length.
