Known for its sunny beaches, the Dominican Republic is also famous for the gourmet rums it produces.
Produced by the Oliver y Oliver distillery, Opthimus 25 ans has benefited from the warm climate of the island of Hispaniola. It is a cuvée aged in solera in American oak casks.

Its color is amber.
On the nose, vanilla dominates, supported by the equally delicious secondary aromas of caramel and almond. Woody notes underlie but remain discreet.
On the palate, the attack is soft and sweet notes become increasingly present. Caramel and wood take over, with vanilla receding into the background.
The finish is long, with the same sweet, slightly woody notes.

I have mixed feelings about this rum. Poor value for money.
Its magnificent mahogany color is a real eye-catcher. Its very complex nose hints at lightly woody, floral and gourmand notes. Before tasting this rum, I told myself it was an excellent rum. I was disappointed. On the palate, it's a homogeneous whole. I had trouble distinguishing distinct aromas on my first sip. The notes are sweet and toasty. After two or three sips, notes of raisins, vanilla and caramel stand out. This is a very smooth rum. It's very pleasant to drink. However, the finish is very simplistic, with a slightly spicy aftertaste. There is not necessarily any aromatic persistence on the palate.
For lovers of sweet, smooth rums. A rum that should also appeal to ladies for its smooth mouthfeel and visual elegance.
