This Papa Rouyo Brut d'Alambic is a selection of brut de distillation white rums for the Antipodes catalog.
This single-varietal rum was distilled in March 2022 from pure red cane juice (R579) in the Papa Rouyo rum distillery's repasse still.
It was selected in stainless steel vat N°25 after only 4 months' rest, i.e. 120 days. It was put into the vat on April 24, 2022.
A total of 1,130 bottles were then bottled without reduction or addition.
